Happy #meatlessmonday ! Viva La France and the slow food movement. Many times for breakfast we had big platters of fresh foods and freshly baked breads. All of our meals consisted of local foods. There were no ‘to go’ meals and not even ‘to go’ cups for coffee. If you wanted to eat or drink you sat down at a table and enjoyed the experience. Another wonderful part about France – almost everywhere we ate had vegan and vegetarian options along with an extensive non alcoholic drink list. One of my favorite things to do is put together a big board of charcuterie or antipasto. Keeping it all vegan, this board was delicious! Here’s how to assemble:
