Meatless Monday is in full effect with this Vegan Salad Nicoise. Inspired by the traditional Salad Nicoise from Nice, France of olives, green beans, and potatoes this version leaves off the tuna but is still packed with much flavor. I’ve made it twice now and it has been a hit with friends and family.
Vegan Salad Nicoise, serves 4
Spring mix, lettuce, spinach, kale or swiss chard, finely chopped
1 cup kalamata olives, halved
6-10 asparagus stalks, blanched
12-20 green beans, blanched
2 cups new potatoes, quartered, tossed in olive oil and sea salt then roasted
1 cup cherry or grape tomatoes, halved and tossed in balsamic vinegar and a pinch of salt
1 small jar of artichoke hearts, drained
1/4 cup purple onion, diced
Vinaigrette of your choice
Directions:
Arrange on platter and serve.
