Spaghetti Squash With Marinara Sauce

This Meatless Monday dish is flavorful, fun, super healthy, and just plain easy to do. Plus, the opportunity to watch the spaghetti squash produce noodles may just make the little ones think its cool to eat it too.

Spaghetti Squash With Marinara Sauce And Mozzarella

2 spaghetti squash, halved and seeds scooped out

Marinara Sauce recipe here

4 mozzarella rounds, halved (optional)

Basil, freshly sliced

Crushed red pepper

Preheat oven to 400 degrees.

Take the 4 halves of spaghetti squash and place face down in a baking dish filled with 1/2 inch of water. Bake for around 30-40 minutes (this depends on size of spaghetti squash which can vary.) The squash is ready to be removed form over when it squeezes to the touch yet is still fairly firm.

spagsquashRemove squash from oven. Drain water. Turn each squash half over.

Spoon in marinara sauce into the carved out center of each squash. Add sauce until top is almost covered.

Top each half with 2 pieces mozzarella. Return to oven for about 5-10 minutes until mozzarella is melted.

Plate each half and sprinkle with fresh basil and red pepper is desired. Serve.
